Vanilla Granola

4 cups jumbo oats

1 cup oat bran

1 cup dessicated coconut

1/2 cup chopped cashew nuts

3 tps ground cinnamon

1 tsp ground ginger

1 tbsp vanilla

1/2 cup demerara sugar

4 tbsp runny honey

1/2 cup syrup

3 tbsp sunflower oil

after cooling add 1 cup sultanas and 1 cup dried cranberries or fruit of your choice – dried apricots, dates, dried apple etc.

So simple

Mix oats, bran, coconut, nuts, cinnamon, ginger and vanilla in a large bowl

Melt sugar, honey, syrup and oil in a pan and pour into bowl, stir and coat

Spread out over two large lined trays and bake at gm 3 for 30 minutes turning regularly to avoid scorching.

When cool add dried fruit and store in an air tight container.

Of course you can change the nuts and fruit and less or more sweetness to suit your own taste
