1 onion, peeled and chopped
2/3 cloves garlic peeled and chopped
Garam masala or curry powder to taste – I use 3 tsps
1 cup red lentils, rinsed and drained
4 tsps Vegetable bouillon powder (I use Marigold) made into 1 litre stock
1 tin or carton of chopped tomatoes
4 tsps tomato purée
Salt and pepper
Rape seed oil to sauté onion and garlic


1. Sauté the onion and garlic in a little oil until soft.
2. Add the spices and stir to coat.
3. Add the rinsed and drained lentils and stir.
4. Stir in the stock.
5. Bring to the boil and simmer for 10 minutes then add the chopped tomatoes and tomato purée
6. Simmer for a further 10 minutes then check for seasoning and serve.
