SNOW BOMBE

Not everybody in our family likes Christmas Pudding – and some of those that do can’t eat it – so amongst the alternative desserts here is a very simple alternative that I got into the freezer this week.

INGREDIENTS

600ml double cream (whipped to soft peaks)
6 oz crushed meringues
1 tbsp icing sugar
2 tbsp Irish Cream liqueur (I used Baileys)
3 tbsp mixed plain, milk, white chocolate drops

METHOD

1. Whip cream to soft peaks
2. Gently fold in Baileys and icing sugar

3. Gently fold in meringues

4. Sprinkle over chocolate chips and fold in

5. Line a pudding basin with cling film

6. Gently fill the basin with cream mixture and pack down until smooth

7. Cover with cling film then wrap in tin foil and freeze
8. Take out shortly before use and serve with a chocolate sauce
