I was looking for an alternative stuffing in addition to my traditional sausagemeat one but didn’t have the exact ingredients for the recipes I found so this is my version – I’m sure you could replace the apple with cranberry or dried fruit such as sultanas or apricots and the pine nut with chopped hazelnuts. It went down surprisingly well with our Christmas dinner and the little that was left over went well in our Boxing Day bubble and squeak. Apologies for lack of a final picture but it went straight to the table in the rush of serving up! I will take one when I make it again!


100g couscous
175 ml hot vegetable stock
50g butter
100g pine nuts
150g chopped apples
1 chopped onion
1 chopped garlic clove
1 egg
Juice of 1 lemon
Chopped parsley


1. Place couscous in a heatproof bowl and cover with cling film.



2. Gently fry the chopped onion and garlic in the butter until softened.

3. Add the pine nuts and then the apple until softening.
4. If you are not going to cook the stuffing straight away allow everything to cool thoroughly.
5. Add the parsley, lemon juice and beaten egg and mix everything together.
6. Push down firmly into an ovenproof dish and bake at 180 C for 45 minutes. If browning too much on top cover with foil.
