SPICY PARSNIP AND APPLE SOUP

I’m trying to eat healthily (again!) and, much to Mr W’s disappointment, this means no cakes for a week or two. It does mean I have more time to spend cooking though and a soup at lunch time is perfect at this time of year.

Inspired by a Spicy root vegetable soup I had at Foxlowe Arts Centre in Leek yesterday I decided to use up some softening apples and parsnips to make soup today.

Having been soaked through taking my little grandson on the school run this morning and knowing Mr W would be returning soon from a windswept funeral I also thought very spicy would be welcome.

INGREDIENTS

1 tbsp oil
1 large onion – chopped
Parsnips – I used 600g after peeling and chopping
4 eating apples – peeled and chopped
6 cardamom pods
Tsp chopped garlic (I use the garlic and ginger purée from the Asian store)
Tsp chopped ginger
Tsp cumin
Tsp coriander
2 pints vegetable stock made with bouillon powder

METHOD

1. Gently heat the oil and fry the onion with all the spices for 3-4 minutes

2. Add the parsnips and continue to gently fry for another few minutes

3. Add the prepared vegetable stock and stir

4. Simmer very gently for 30 minutes before adding the apple

5. Continue to simmer for about 15 minutes until the apple is softened – season to taste with salt and black pepper

6. Take of the heat and (with care) purée either in a processor or – like me – use a hand blender

7. Return to the heat and serve with a swirl of Creme Fraiche or sour cream

    Fantastic comfort food. Imported parsnips are a bit of a luxury for me so usually roast them but do like parsnip soup especially with a bit of spice.

      We need it here to keep warm at the moment! Dreadfully wet & windy so nice to get cosy and warm when you’ve been wet through!
