STICKY CHOCOLATE MUFFINS

Yesterday we had an incident with a football, a window and the small person who lives next door. Unfortunately Mr W was quite stern with him and much to our misery tears ensued! Although I think he was right in what he did we still felt bad so this morning I made these muffins, decorated with chocolate ganache, and Mr W handed a plateful over the garden fence to the previously mentioned small person to prove we are all still friends!

INGREDIENTS

115g dark chocolate
90g Butter
175g Golden Caster Sugar
2 large eggs
185g Plain Flour
1/2 tsp baking powder
1/2 tsp bicarb of soda
1/2 tsp salt
2 tbsp milk
A handful of mini marshmallows
A handful of chocolate chips (I used white ones today)

METHOD

1. Break the chocolate into a bowl and melt over a pan of simmering water. I now do this in a shallow metal bowl so there is no chance of the water touching the bowl.

2. Cream the butter and sugar until light and fluffy.

3. Add the eggs and then the chocolate.

4. I don’t sift the flour but I give it a quick whisk to make sure there’s no lumps. Stir gently into the mixture then add the milk.

5. Fold in the marshmallows and chocolate chips.

6. Spoon into the baking cases and bake for about 20 minutes at 160 degrees Fan.

7. These are nice as they are but you can decorate with buttercream, melted chocolate or chocolate ganache and perhaps add a sprinkle of marshmallows or chocolate chips.
