COURGETTE QUICHE

I got two HUGE courgettes this week in my veg box and ever fearful of wasting food this was one of the recipes I used them up with!

Tuesday, 6th May Update – I’ve been reading a lot of blogs recently and you can pick up some great ideas – like the Credit Crunch Munch from Fab Food 4 All and Fuss Free Flavours. This months challenge is being hosted by Gingey Bites. I hope they like my tasty frugal offering!

INGREDIENTS

400 g shortcrust pastry

For filling:

350g courgettes
1 tbsp olive oil
Knob of butter
1 large onion finely chopped
2 chopped garlic cloves
Small bunch of fresh thyme leaves or teaspoon dried thyme
150ml natural yoghurt
3 large eggs
125 g grated cheese – any tasty one of your choice

METHOD

1. Preheat a baking sheet in the oven to 220°C/fan200°C/gas 7. Roll out the pastry on a lightly floured work surface to line a 23cm loose-bottomed flan tin. Prick the base all over with a fork and chill for 10 minutes. Line with baking paper and baking beans and bake for 12 minutes. Remove the paper and beans and return to the oven for 5 minutes.

2. Grate the courgettes and place in a sieve, sprinkle with a little salt and leave over a bowl for 10 minutes. Turn and press in the sieve to remove moisture.

3. Heat the olive oil and butter over a low heat and soften the onion and garlic for 10 minutes. Increase the heat slightly and stir in the courgette and thyme and fry for a few minutes without browning.

4. Either by hand or machine mix the yogurt with the eggs and most of the grated cheese, retaining a handful for the top, and some black pepper.

5. Spoon the courgette and onion mix into the flan case. Pour the liquid mixture over the top then sprinkle the remaining cheese on top.

6. Cook in the oven for 30 minutes until golden and just set.

      Thank you! Had a few courgettes recently – got a big bag full for £1 when visiting friend up in Yorkshire. This week have abundance of aubergines as ordered 1 kg instead of 1 item on my farm delivery! 😳
