Sometimes the simplest things bring the most pleasure. Baking is something I’ve done with my gorgeous grandson since he was big enough to reach the work top while standing on my old kitchen chair.

He particularly loves kneading dough – well bashing the bubbles out is such fun! He loves the finished bread – just toasted with butter.

So as soon as he knows there’s a school holiday he wants to know which day he can come to bake. We had been shopping and got some bits and pieces to use for our Easter Bake Off and I already have my stash of paper cases and chocolate.

I hadn’t made crispy cakes for a long time but I’d seen this recipe on the BBC Good Food website Chocolate Cornflake Cakes and thought it would be a quick one to do while our cakes were baking.

The cakes I decided to do were also on the BBC Good Food website. Chocolate Fudge Cupcakes. To be honest although nice I think they are a little rich for young children and I would try them again with milk chocolate.

Fascinated by edible glue!

Fascinated by edible glue!

He’s a good reader but now he’s heading for 5 he also likes to reset the digital scales and measurements have to be spot on or he will have to remove some till the numbers are exactly right. He doesn’t get that from me. I did the melting and transfer of hot ingredients but he did the stirring and spooning. I did the buttercream piping but he rolled the fondant and used my food paintbrush and edible glue to attach the extras.

” I’m a cake artist Nanna”. It was a brilliant afternoon and another that makes me remember that these times and memories are so precious. I truly appreciate every single one – even more so because he has a recurring medical problem and has gone through a lot (and still is) during his short life but he’s always happy which is a testament to his parents.

He doesn’t eat much cake but enjoyed one of the cornflake cakes (and more than one of the mini eggs) and was very proud to take a box home for Mummy and Daddy!
