Apricot and White Chocolate Traybake

I was lucky to be invited to an “Afternoon Tea” event with Neff and AO.com (Appliances Online) earlier this week. It was a really enjoyable afternoon spent watching demonstrations, hands on baking, Q and A sessions with the lovely John Whaite and an opportunity to gaze longingly as we viewed the range of new Neff Hide and Slide ovens which we used throughout the event.

I’m going to try a number of the recipes (well you know we love traditional afternoon teas) particularly two that were used for a taste test to show that with the new ovens Circotherm system you can cook two strongly flavoured dishes with no cross tainting of flavours. They were Salmon Tartlets and Lemon and Poppyseed Muffins. None of us could identify which batch of muffins were cooked with the fish – or which weren’t!

Today though I thought I would make this traybake recipe from the Neff kitchen as it would be good to share with my daughter’s builders who’ve been asking for more cake! Always ready to adapt I didn’t have quite enough apricots so made up the weight with sultanas – the result was equally yummy!

INGREDIENTS

170g (6oz) butter
170g (6oz) caster Sugar
170g (6oz) self raising flour
1tsp baking powder
3 eggs
100g ready to eat dried apricots chopped
100g white chocolate, chill then chop roughly.
1tbsp icing sugar to decorate

INGREDIENTS

1. Pre-heat the oven at 160C.

2. Cream butter and caster sugar together until light and fluffy.

3. Beat in eggs and fold in flour, apricots and chocolate.

4. Pour into a lined, greased tin (approx 30mm x 20mm).

5. Bake for 20-24 mins until well risen and golden brown.

6. Cool, dust with icing sugar then cut into fingers to serve.
