QUICK & TASTY TOMATO SOUP!

Yesterday we made a visit to the National Memorial Arboretum near Lichfield. It is a beautiful place and certainly worth visiting for many reasons. It was great to see every age group there though I wouldn’t recommend the Far East museum display for little ones as the pictures would be quite shocking.

There are recommended walking routes, or you can wander at your leisure and in addition there are tours round on a little train with commentary which give a good overview to the more than 300 memorials.

There is a newly refurbished cafe and after being drenched during a (short lived) thunderstorm we decided to head indoors and dry out. A nice young chef recommended the tomato soup as he’d made it – how could I refuse! As it seemed to help my tormented digestive system I decided to have a try at making some for us today. It turned out to be very quick and easy to do so here’s the recipe!

INGREDIENTS (really just was available in the fridge!)

2 carrots
2 sticks celery
3 small onions
1 tsp garlic purée
Glug of olive oil
2 vegetable stock cubes
2 x 400 g tins chopped tomatoes
Handful chopped baby plum tomatoes
Glug of Worcestershire sauce
sea salt
freshly ground black pepper

METHOD

1. Chop the carrots, celery and onions

2. Sautée in a glug of olive oil for 10 minutes with the garlic until softening.

3. Dissolve the stock powder or cubes in 1.5 litres of boiling water and add to the vegetables with the tinned and fresh tomatoes.

4. Simmer for 15 minutes and season with Worcestershire sauce, salt and pepper.

5. Blend with a hand blender or in a processor and gently reheat before serving.
