CHUNKY GUACAMOLE

I sometimes get a real food bargain (not from the supermarket of course)! Today’s was a huge bag of tomatoes for £1 and 4 avocados for a £1.

Only one thing to make on such a lovely sunny day – a chunky Guacamole to have with our meal tonight. This is so quick and easy it can hardly be called a recipe but I prefer the chunkiness of this rather than the smooth dip style you will find in the supermarket.

INGREDIENTS

2 ripe avocados
1 bunch of spring onions (just because I had them you can use red onion)
3 tbsp lemon juice
3 tsp Tabasco
1 tsp garlic paste
3 ripe tomatoes
Black pepper
Sea salt

METHOD

1. Cut the avocados in half, remove the stone and use a teaspoon to remove the flesh.

2. Place in a bowl and add the lemon, Tabasco and garlic (the lemon will stop the avocado turning brown).

3. Chop the spring onions and add to the bowl.

4. Chop the tomatoes into chunky pieces and add to the bowl.

5. Season with freshly ground black pepper and salt and using a knife chop the soft avocado into the other ingredients to create bite size pieces.

6. Serve either as a side dish or as a snack with tortilla chips.
