DOUBLE CHOCOLATE CHIP COOKIES

The Great British Bake Off spin off show Extra Slice asked for pictures of your biscuits for tonight’s programme so this afternoon I made a batch of chewy, chocolatey, double choc chip cookies. This actually made 36 cookies so I would halve it next time for just the two of us.

Luckily my son called round so I sent him home with a box full. Also a bottle of coke I spotted in Boots – if you didn’t know and spot a “Hunk” bottle you get it free at the moment!

INGREDIENTS

8 oz unsalted butter at room temperature
1 cup light brown sugar
1 cup golden granulated sugar
2 teaspoons pure vanilla extract
2 large eggs at room temperature
2/3 cup good cocoa
2 cups plain flour
1 teaspoon bicarb of soda
1 teaspoon fine sea salt
8oz good white/dark chocolate, roughly chopped

METHOD

1. Preheat the oven to 170 degrees fan.

2. Cream the butter and sugar until light and fluffy.

3. Add the vanilla, then the eggs, 1 at a time, and mix well. Add the cocoa and mix again.

4. Sift together the flour, baking soda, and salt and add to the chocolate with the mixer on low speed until just combined. Fold in the chopped chocolate.

5. Spoon the dough onto a baking sheet, using a rounded tablespoon. Flatten the dough slightly.

6. Bake for exactly 15 minutes (the cookies will seem underdone). Remove from the oven and let cool slightly on the tray then transfer to a wire rack to cool.
